  • 1 Pizza dough
  • 160 g aragula lettuce
  • 1 Green peppers
  • 2 Tomatoes
  • 1 Eggplant
  • 5 red onion
  • 120 g Mozzarella cheese
  • 0.5 Lemon
  • 1 Red peppers
  • 60 mL (¼ cup) Olive oil
  • 4 pinch Salt
  • 4 pinch Pepper

Preparation steps

  • Preheat the oven to 400 °F.
  • Rinse and dry the vegetables.
  • Peel and slice the onions.
  • Peel and crush the tomatoes.
  • Cut the eggplant into rounds.
  • Deseed and slice the red pepper.
  • Cut the mozzarella into slices.
  • Grill the eggplant rounds in the oven with the green pepper for 10 minutes. Take out of the oven.
  • Drizzle the zucchinis with olive oil.
  • Peel and seed the green pepper and cut it into strips.
  • Stir-fry the onions in a little olive oil until they are transparent.
  • Spread the dough on a baking sheet or in a pie plate to form a big pizza.
  • Cover with all the vegetables and slices of mozzarella.
  • Season with salt, pepper, and drizzle with a little olive oil.
  • Put in the oven for 25 minutes.
  • Rinse and dry the aragula.
  • Season with 2 tablespoons of olive oil and lemon juice. Add salt and pepper.
  • Serve warm along with aragula salad.
