Spicy leg of lamb

Ingredients

  • 200 g Lamb shoulder joint
  • 160 g Lamb's lettuce
  • 10 g Thyme
  • 1 tablespoon Cayenne
  • 45 mL White wine
  • 30 mL Vinaigrette
  • 30 mL Olive oil
  • 2 pinch Fleur de sel
  • 2 pinch Pepper
  • 160 g potato
  • 2 garlic clove

Preparation

  • Preheat the oven to 440 °F.
  • Peel the potatoes.
  • In a bowl, mix the crushed garlic, thyme leaves, hot pepper, 2 tablespoons of olive oil, 2 pinches of salt, white wine and pepper.
  • Make about ten deep notches in the leg with a knife.
  • Rub the sauce over the leg, insert carefully into the slits.
  • Place the lamb in a baking dish and surround it by the potatoes.
  • Bake for 30 minutes, drizzle it occasionally with the cooking juice.
  • Meanwhile, prepare a vinaigrette with sunflower oil, vinegar and mustard, and season the lamb's lettuce.
  • Serve the spicy leg of lamb garnished with the lamb's lettuce salad.
