Maccheroncini with prawns

  • 120 g maccheroncini
  • 10 Prawns, peeled
  • 100 g Tomato pulp
  • 100 g mesclun
  • 1 Shallots
  • 1 teaspoon Parsley
  • 1 pinch Thyme
  • 1 pinch Oregano
  • 1 pinch Cayenne ground pepper
  • 1 pinch Cinnamon flakes
  • 100 mL White wine
  • 45 mL Olive oil
  • 5 mL balsamic vinegar
  • 1 pinch Salt
  • 1 pinch Pepper


  • Peel and chop the shallot.
  • Rinse, spin and chop the parsley.
  • Heat 1 tablespoon of olive oil in a frying pan and stir-fry the shallot.
  • Add the white wine; bring to a boil until evaporation.
  • Lower the heat.
  • Add the hot pepper, cinnamon, thyme, oregano and tomato pulp.
  • Add salt, pepper and mix. Simmer for 20 minutes.
  • Meanwhile, cook the pasta in a large volume of salted boiling water according to the package instructions.
  • Prepare the salad: wash and spin the mixed green salad leaves.
  • Mix in a salad bowl with 1 tablespoon of olive oil and 1 teaspoon of balsamic vinegar.
  • Add salt and pepper.
  • Drain the pasta and add to the sauce.
  • Heat 1 small tablespoon of olive oil in a frying pan and sauté the prawns for a few seconds on each side. Add salt and pepper.
  • Divide the pasta among 2 deep plates and place the prawns on top.
  • Sprinkle with parsley.
  • Serve maccheroncini with prawns very hot, alongside with the mixed green salad.
