Chilli lentils

  • 50 g Red lentils
  • 80 g Green beans
  • 0.5 Hot chilli
  • 1 teaspoon Ginger, fresh
  • 1.5 tablespoon Thai basil
  • 1 tablespoon Coriander leaves
  • 1 kaffir leaf
  • 10 g Butter
  • 200 mL Vegetable broth
  • 5 mL Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper


  • Rinse the lentils and the vegetables.
  • Pat dry, deseed and chop the chilli.
  • Peel and grate the ginger.
  • Wipe and finely chop the basil and the coriander.
  • Mash the kaffir lime leaf.
  • Heat the olive oil in a large frying pan over medium heat.
  • Add chilli, ginger, and kaffir lime leaf.
  • Stir-fry for 1 minute.
  • Add the lentils, broth, and let it simmer for 5 to 6 minutes until the lentils are cooked through but not falling apart.
  • Steam the green beans for 7-8 minutes.
  • Stir in 1 knob of butter, add salt and pepper.
  • Place the coriander and the basil in the bottom of the plates and spoon over lentils.
  • Serve kaffir lime leaf and chilli lentils with green beans alongside.
