Catalan cannelloni

  • 400 g Cannelloni
  • 0.5 Chicken breast
  • 75 g Chicken liver
  • 1 spring onion
  • 1 Leeks
  • 1 tablespoon Breadcrumbs
  • 200 g Tomato pulp
  • 2 Sweet Gem lettuce heart
  • 100 mL Liquid cream half fat
  • 1 strand Thyme
  • 15 g Parsley
  • 60 mL Olive oil
  • 2 pinch Salt
  • 2 pinch Pepper
  • 100 g Ground beef
  • 100 g Ground pork
  • 50 g Grated cheese
  • 1 pinch nutmeg


  • Wash the leek and cut into thin rounds.
  • Peel and chop the onion.
  • Heat 2 tablespoons of olive oil in a sauté pan and brown the meat, the chicken, the chicken livers, the onion and the leek for 5 to 10 minutes.
  • Remove from heat; add the breadcrumbs, salt, pepper, and mix.
  • Oil the bottom of the dish and cover with half of the tomato pulp.
  • Oil the bottom of a gratin dish. Preheat the oven to 400 °F.
  • Fill the cannelloni with the stuffing and align in the dish close to each other.
  • Cover with the remaining tomato pulp, cream and grated cheese.
  • Put in the oven and cook for 25 minutes.
  • Serve the Catalan cannelloni along with Sweet Gem hearts seasoned with vinaigrette.
