All-vegetables coca

  • 1 Pizza dough
  • 2 Tomatoes
  • 1 Leeks
  • 1 Zucchini
  • 1 Cucumber
  • 100 g Mushrooms
  • 2 Onions
  • 2 garlic clove
  • 12 mint leaf
  • 1 teaspoon Sweet chilli
  • 75 mL Olive oil
  • 4 pinch Salt
  • 4 pinch Pepper


  • Preheat the oven to 350 °F.
  • Roll out the dough in the baking tray.
  • Lift the edges a little. Set aside.
  • Peel the onions, garlic and zucchini.
  • Peel the tomatoes.
  • Wash the mushrooms.
  • Remove the root and green part of the leek and wash the white part.
  • Chop all the vegetables.
  • Heat a little oil in a pan and sweat the onion, garlic and leek.
  • Add the zucchini, mushrooms, tomatoes, chilli, 1 tablespoon of oil, salt and pepper.
  • Stir for 5 minutes over heat and let rest for 5 minutes.
  • Remove the filling from the frying pan with a skimmer to drain most of the liquid and spread over the dough.
  • Put in the oven and cook for 30 minutes.
  • In the meantime, peel the cucumber, cut it in 4 lengthways and remove the seeds.
  • Mix with the chopped mint and a little oil. Add salt.
  • Serve the all-vegetables coca along with the cucumber salad.
